Prep and set aside:
- 2 lbs top roast chuck - cubed in medium/large cubes, salt with 1 tsp salt per pound and allow to sit, rub with 1/2 tbsp “chipotle seasoning” per pound (Spicy Lady Chipotle Seasoning blend is chipotle chili pepper, garlic, onion, coriander, paprika, black pepper, cumin, oregano)
- 2 lbs beef spare ribs, salt with 1 tsp salt per pound and allow to sit, rub with 1/2 tbsp chipotle seasoning per pound
- 1 white onion - diced
- 1 head garlic, roughly chopped
- 1 can diced tomatoes (14oz)
- 1 can chipotles in adobo sauce (12 oz)
- 1/4 cup apple cider vinegar
- 1 12oz bottle Abita Turbo Dog
Add oil to pan and brown onions in pan until translucent
Add garlic and continue browning until aromatic
Add tomatoes, heat thoroughly
In blender, blend entire can of chipotles including adobo sauce, beer, vinegar and onion/garlic/tomato mixture, reserving pan for browning beef
Add oil to pan and brown beef and ribs in sauce pan (may have to do meat in batches)
Add browned beef to slow cooker and contents of blender to slow cooker, mix well, and put on low for 8 hours, stirring occasionally to ensure meat is covered
Use slotted spoon to remove beef and shred, remove bones and rib parts
Serve with tacos, lime, pickled red onion, or tomatillo salsa, queso fresco etc.
